Christmas Morning Make-Ahead Baked French Toast

This is my SIL's traditional breakfast for Christmas morning, and I'm getting the recipe down before her copy dissolves into tatters in her recipe box :)

Holiday Morning French Toast

1 cup brown sugar
1/2 cup butter, melted
3 tsp cinnamon (divided)
3 tart apples: peeled, cored, and thinly sliced
1/2 cup dried cranberries or raisins
1 loaf Italian or French bread, cut into 1 inch slices
6 large eggs
1 1/2 cup milk
1 Tbsp vanilla

Combine brown sugar, butter and 1 tsp cinnamon in a 9x13" baking dish. Add apples and cranberries; toss to coat well. Spread apple mixture evenly over bottom of baking dish and arrange slices of bread on top.

Mix eggs, milk, vanilla and remaining 2 tsp cinnamon until well blended. Pour mixture over bread, soaking bread completely. Cover and refrigerate 4-24 hours.

Bake covered with aluminum foil at 375 for 40 minutes, then remove foil and bake an additional 5 minutes. Remove from oven and let stand 5 minutes before serving.

I make this recipe too! It's on allrecipe.com :D

However, I take a few shortcuts. I use 1 loaf of Pepperidge Farm cinnamom bread and I just add the eggs and vanilla.

I usually keep out the raisins, but I'll have to try the cranberries!

I've also prepared it at night or the morning of and they both worked out. If I prepare it the morning of, then when I'm pouring the milk mixture in, I make sure that all the bread pieces are soaked.
