Recipe Time

I wanted to share the recipe for the coffee cake I took to MOPS yesterday. It's absolutely scrumptious, and super easy, too (sorry, but I don't remember where the recipe originally came from). I'd love to post a picture, but my pan came home empty :)

Cinnamon Coffee Cake
1 pkg yellow cake mix
2 pkgs instant vanilla pudding mix (4 serving size)
4 eggs
1 c water
1 c vegetable oil
1 c packed brown sugar
1 Tb cinnamon
1/2 tsp nutmeg
1 c chopped walnuts

Preheat oven to 350. Combine cake mix, pudding mixes, eggs, water, and oil, and mix until well blended. In another bowl, stir together the brown sugar, cinnamon, nutmeg and nuts. Pour half of the batter into a greased 9x13 pan, spreading evenly. Sprinkle with half of the nut mixture. Cover with the rest of the batter, and sprinkle with the rest of the nut mixture. Bake for 20 minutes in the preheated oven, then turn the oven down to 325 and bake for an additional 35 to 40 minutes.

Experiment with different pudding flavors, add chocolate or butterscotch tips to the batter, and/or use a different nuts in the streusel. Yummy!

It's been a loooooooong time since I've tried a new recipe. This sounds like a good one to try. I'll let you know when I do! Thanks for sharing! It sounds yummy and easy!

Thanks for helping me out with the ingredients while I was at the grocery store. Well, when I looked in the pantry this morning for all the ingredients, I didn't have enough veggie oil, only 1/4 c. left. So, I added another 1/4 c. of olive oil and just halved the recipe. I did chocolate pudding, not realizing that this was a cinnamon coffee cake and so I left out the cinnamon and nutmeg because I wasn't too sure about the combination. I did decide to add nuts after I read the recipe and I did decide to use walnuts when I read that the nut mixture also goes in the center. I realized the nuts are in there to add that extra crisp, which is why I decided on walnuts over pecans (I told you I was going to try pecans). And the result...Despite the changes I made, it was still OH SO GOOD! Great recipe!!!
